what do you call those old antique wooden toys wheels that kids roll with a stick?

you know, the ones were the kids run and hit the back of the wheel with a stick in order to make it roll

They do not really have a name --
but what you are asking was called

"Hoop rolling"

The hoops you see kids playing with
in the movies are mostly hoops that
were used to hold barrels together
{mostly whiskey}

The stick itself was the most
versatile toy ever...

a stick could be anything from
a twirling baton, a mighty sword,
a toy gun, a barker's cane,
a ruler's staff,
or a magic wand

In fact, the cardboard box,
the stick, and a hoop were just
recently commemorated and
given their own special display
in the Hall of Toys hall of fame
just last year ...

Some toys are better made of wood.

Wooden blocks are best to start with, and for advanced builders. They make good sounds when knocked over by older infants / younger toddlers, and school age kids can build very elaborate towers with them.

The wooden Thomas the trains are the best. Kids prefer them. They are "kid powered" so the kids actively use them, not just watch them go like battery operated ones. They feel solid in their hands.

Wood acts differently from plastic, and feels different. A variety of textures can only help their brains grow.

I have to agree, what type of toy doesn't teach kids something? I do give many toys for specific skills etc. but if they are handling something with their hands, they are learning.
